For the Venison Donuts:

1 lb ground venison

2 cups all-purpose flour

2 tsp baking powder

1 tsp salt

1 tbsp sugar

2 large eggs

1 cup milk

4 tbsp melted butter

1 tsp garlic powder

1 tsp onion powder

1/2 tsp ground black pepper

Olive oil, for frying

Fresh parsley, chopped (for garnish)

For the Mustard Glaze:

3 tbsp Dijon mustard

1 tbsp honey

1 tbsp apple cider vinegar

1 tbsp brown sugar

2 tbsp butter

Salt & pepper, to taste

1/4 cup water (to thin, as needed)


Instructions

1. Season ground venison with salt, pepper, garlic powder, onion powder; set aside.

2. In a large bowl, whisk flour, baking powder, salt, sugar.

3. In another bowl, whisk eggs, milk, melted butter.

4. Combine wet and dry ingredients until just mixed. Fold in venison.

5. Lightly flour hands and shape dough into rings or use a donut cutter.

6. Heat oil in pan to 350°F (175°C). Fry donuts 3-4 mins per side until golden.

7. Drain on paper towels.

8. In saucepan, combine mustard, honey, vinegar, brown sugar; simmer gently.

9. Add butter; stir until glaze thickens. Thin with water if needed. Season to taste.

10. Dip warm donuts in glaze. Garnish with parsley. Serve immediately.

Notes

Use fresh ground venison for best flavor.

Don’t overmix dough — keep it light for tender donuts.

Maintain oil temp at 350°F to avoid greasy donuts.

Fry in batches; don’t overcrowd the pan.

Make ahead: Store fried donuts unglazed, reheat in oven, then glaze fresh.
