For the Venison Ice Cream Base:

2 cups heavy cream

1 cup whole milk

3/4 cup maple syrup

4 large egg yolks

1 tsp pure vanilla extract

1/2 tsp sea salt

1/4 tsp cinnamon (optional)

1/2 pound cooked and finely ground venison (lean, mild-flavored)

For the Maple Crunch:

1 cup chopped pecans or walnuts

1/2 cup maple syrup

1 tbsp unsalted butter

1/4 tsp sea salt


Instructions

1. Cook venison thoroughly and grind finely.

2. In a saucepan, heat cream and milk over medium heat. Add venison and steep for 20 mins, stirring occasionally.

3. Strain mixture through fine sieve to remove solids.

4. In a bowl, whisk egg yolks and maple syrup. Gradually add warm venison-infused cream, whisking constantly.

5. Pour back into saucepan. Cook over low heat, stirring until thickened (8–10 mins).

6. Remove from heat. Stir in vanilla, salt, and cinnamon. Cool and refrigerate 4 hours or overnight.

7. For maple crunch: In small saucepan, melt butter, add maple syrup, cook until thickened (5 mins). Stir in nuts and salt, spread on parchment to cool. Break into small pieces.

8. Churn custard in ice cream maker per instructions (20–25 mins). In last minutes, fold in maple crunch.

9. Freeze in airtight container at least 4 hours before serving.

Notes

Use lean, mild venison to avoid gamey flavors.

Strain cream mixture well for a silky base.

Balance flavors with a hint of sea salt.

Pairs well with maple syrup drizzle or dark chocolate shavings.
