Ingredients
Scale
- 1 lb ground venison
- 2 large eggs
- 1 cup breadcrumbs (or almond flour for gluten-free option)
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tbsp fresh parsley or thyme, chopped
- 2 tbsp ketchup or tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/4 tsp chili powder or pinch of cayenne (optional)
- 1/2 cup finely grated carrots or zucchini
- 1/2 cup shredded cheddar, mozzarella, or goat cheese
Instructions
- Finely chop the onion and garlic to ensure even flavor distribution.
- Preheat your oven to 350°F (175°C) and grease a muffin tin to prevent sticking and create a crispy crust.
- In a large bowl, combine the ground venison, breadcrumbs, beaten eggs, chopped onions, minced garlic, fresh herbs, ketchup, salt, pepper, smoked paprika, and chili powder if using.
- Mix thoroughly but gently to evenly distribute the ingredients without overworking the meat.
- Evenly divide the meat mixture into the prepared muffin cups. Press each portion lightly to compact, keeping the texture light and airy.
- Bake the muffins in the preheated oven for 20-25 minutes or until they reach an internal temperature of 160°F (71°C). The muffins should remain firm but moist inside.
- Remove them from the oven and allow them to cool slightly. Carefully pop them out of the tin and serve warm to enhance the flavors and texture.
