  • 2 venison steaks (1 to lb total, cut into bite-sized chunks)
  • 1 cup buttermilk
  • 1 cup plain breadcrumbs
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional, for a little heat)
  • Lard (for frying, enough to fill your skillet about ½ inch deep)

Instructions

  1. Pat the venison chunks dry with paper towels. Place them into a bowl and pour in the buttermilk. Stir to coat and let it sit for 30 minutes. You can refrigerate the mixture overnight for enhanced flavor.
  2. In a shallow dish, combine the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Mix well.
  3. In another shallow dish, spread out the breadcrumbs, ready for coating.
  4. Remove the venison from the buttermilk mixture. Let the excess drip off before you start coating.
  5. First, coat each piece in the seasoned flour, ensuring full coverage. Next, press each piece into the breadcrumbs until they are well coated. Set aside.
  6. Pour lard into your cast iron skillet, filling it until it reaches about ½ inch deep. Heat over medium until the temperature reaches around 350°F. You can test by dropping a pinch of flour into the oil; it should sizzle.
  7. Fry the venison nuggets in batches. Ensure you don’t overcrowd the skillet to achieve that crispy texture. Cook each side for about 3-5 minutes until golden brown and fully cooked.
  8. Transfer the cooked nuggets to a plate lined with paper towels. Sprinkle with a little extra salt if desired.
  9. Serve hot with your favorite dipping sauces like ketchup, BBQ sauce, or honey mustard.

Notes

Allow the venison to soak longer in buttermilk for a juicier outcome. Use a meat thermometer to ensure nuggets reach 160°F for safe consumption.
