Ingredients

  • Water, 1 cup (240 ml)
  • Kosher salt, 2 tablespoons (34 g)
  • Black pepper, 1 tablespoon (7 g)
  • Ground coriander, 1 tablespoon (6 g)
  • Garlic powder, 1 tablespoon (10 g)
  • Onion powder, 1 tablespoon (9 g)
  • Paprika, 1 tablespoon (7 g)
  • Crushed red pepper flakes, 1 teaspoon (3 g)
  • Cure #1 (sodium nitrite), 1 teaspoon (5 g)
  • Natural sheep casings, as needed

Instructions

  1. Soak the natural sheep casings in warm water according to package instructions.
  2. In a large mixing bowl, combine ground venison and ground beef.
  3. Add non-fat dry milk to the meat mixture and mix well.
  4. Pour water into the bowl and mix until evenly combined.
  5. Add kosher salt, black pepper, ground coriander, garlic powder, onion powder, paprika, and crushed red pepper flakes to the mixture.
  6. Sprinkle Cure #1 over the meat mixture and mix thoroughly.
  7. Rinse the soaked casings under running water to remove excess salt.
  8. Attach the casings to a sausage stuffer or funnel.
  9. Stuff the meat mixture into the casings, being careful not to overfill.
  10. Twist the filled casings into 6-inch sticks, leaving space at the ends.
  11. Preheat a smoker to 165°F (74°C).
  12. Hang or lay the snack sticks in the smoker, ensuring good air circulation.
  13. Smoke the sticks until they reach an internal temperature of 155°F (68°C).
  14. Remove the snack sticks from the smoker and let them cool at room temperature.
  15. Once cooled, store the snack sticks in the refrigerator or freezer.
