Ingredients

- Paprika, 1 tablespoon (7 g)
- Crushed red pepper flakes, 1 teaspoon (3 g)
- Cure #1 (sodium nitrite), 1 teaspoon (5 g)
- Natural sheep casings, as needed
Instructions
- Soak the natural sheep casings in warm water according to package instructions.
- In a large mixing bowl, combine ground venison and ground beef.
- Add non-fat dry milk to the meat mixture and mix well.
- Pour water into the bowl and mix until evenly combined.
- Add kosher salt, black pepper, ground coriander, garlic powder, onion powder, paprika, and crushed red pepper flakes to the mixture.
- Sprinkle Cure #1 over the meat mixture and mix thoroughly.
- Rinse the soaked casings under running water to remove excess salt.
- Attach the casings to a sausage stuffer or funnel.
- Stuff the meat mixture into the casings, being careful not to overfill.
- Twist the filled casings into 6-inch sticks, leaving space at the ends.
- Preheat a smoker to 165°F (74°C).
- Hang or lay the snack sticks in the smoker, ensuring good air circulation.
- Smoke the sticks until they reach an internal temperature of 155°F (68°C).
- Remove the snack sticks from the smoker and let them cool at room temperature.
- Once cooled, store the snack sticks in the refrigerator or freezer.
