Ingredients

  • 1.5 lbs chicken breast, cut into 1-inch cubes or shredded
  • 3 cans (15 oz each) white beans, such as Cannellini or great northern
  • 1 can (4 oz) diced green chilies
  • 8 oz cream cheese, softened
  • 4 cups low-sodium chicken broth
  • 1 cup frozen corn
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • ¼ tsp salt and pepper (to taste)

Instructions

  1. Cut the chicken into 1-inch cubes, season with salt and pepper. Set aside.
  2. Heat olive oil over medium heat, sauté the diced onion until soft (about 5 minutes), and then add minced garlic for another minute.
  3. Add cumin, chili powder, oregano, smoked paprika, chicken broth, the white beans (with liquid), diced green chilies, and frozen corn. Stir well to combine.
  4. Incorporate the chicken. Bring the mixture to a gentle boil, then reduce the heat to low. Simmer uncovered for 20-25 minutes until the chicken is tender.
  5. Add softened cream cheese, stirring until fully incorporated. Adjust seasoning as desired, adding lime juice if you wish, and serve topped with your favorite additions.
