- 2 cans white beans (like cannellini), drained and rinsed
- 1 can corn, drained
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1–2 jalapeños, diced (optional for heat)
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (like Monterey Jack)
- Fresh cilantro for garnish
Instructions
- In a large pot over medium heat, combine diced onions and minced garlic. Sauté until onions become translucent.
- If adding heat, mix in diced jalapeños, alongside the shredded chicken, white beans, corn, chicken broth, ground cumin, oregano, salt, and pepper. Stir everything well.
- Bring the mixture to a simmer, letting it cook for about 20 to 30 minutes.
- Remove from heat and stir in sour cream and shredded cheese until creamy.
- Serve hot, garnished with fresh cilantro.

Use rotisserie chicken for a time-saving option. For vegans, swap chicken with veggies or tofu. Adjust seasonings to personal taste preferences.
