- 1 pound lean ground beef
- 1 medium onion, finely diced
- 2โ3 cloves garlic, minced
- 1 packet taco seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn kernels, drained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (10.5 oz) can condensed cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded Mexican cheese blend, divided
- 1 large bag (9.25 oz) Nacho Cheese Doritos, lightly crushed
- Optional garnishes: sliced green onions, diced avocado, fresh cilantro, diced tomatoes
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Grease a 9ร13 inch baking dish.
- Brown ground beef with onion and garlic until meat is no longer pink. Drain excess fat.
- Add taco seasoning, black beans, corn, and diced tomatoes. Simmer 2-3 minutes.
- Mix cream of mushroom soup with sour cream in a separate bowl.
- Layer half the meat mixture, half the cream mixture, 1 cup cheese, and half the crushed Doritos.
- Repeat layers, finishing with remaining cheese.
- Cover with foil and bake 15 minutes, then uncover and bake 10 more minutes.
- Let rest 5-10 minutes before serving with chosen garnishes.
