  • 450 g ground goose breast (≈ 1 lb)
  • 450 g fatty beef (≈ 1 lb)
  • 250 mL ice water (≈ 1 cup)
  • 35 mL salt (≈ 2 ⅓ Tbsp)
  • 5 mL Prague powder / pink salt (≈ 1 tsp)
  • 15 mL black pepper (≈ 1 Tbsp)
  • 10 mL fennel seeds (≈ 2 tsp)
  • 10 mL paprika (≈ 2 tsp)
  • 5 mL garlic powder (≈ 1 tsp)
  • 5 mL cayenne pepper (≈ 1 tsp)
  • Lamb, goat, or 22 mm collagen casings

Instructions

1. Add ground venison, goose, and fatty beef to a large mixing bowl or sausage mixer.

2. Add all spices, salt, and Prague powder.

3. Pour in the ice water.

4. Mix vigorously by hand (wear gloves) until the meat becomes sticky and well-combined; it should cling to your hand when lifted.

5. Load the mixture into a sausage stuffer fitted with a fine or “breakfast” size stuffing tube.

6. Slide the casing onto the horn and tie the end securely.

7. Push meat through the stuffer, packing firmly into the casing—do not overfill or it may burst.

8. Twist into links to your preferred length.

9. Hang in a smoker set to 200°F (93°C).

10. Smoke until internal temperature reaches 165°F (70°C), about 3 hours.

11. Transfer sausages to the refrigerator and chill overnight.

12. Package and store; enjoy as classic pepperoni sticks, or experiment with  lavor variations like honey-garlic or spicy blends.
