  • 2 teaspoons (10 ml) crushed red pepper flakes (approximately 10 grams)
  • 1 teaspoon (5 ml) coriander powder (approximately 5 grams)
  • 1 teaspoon (5 ml) sugar (approximately 5 grams)
  • 1 tablespoon (15 ml) salt (approximately 15 grams)
  • 1/2 cup (120 ml) water (approximately 120 milliliters)

Instructions

  1. In a large mixing bowl, combine the ground venison and ground beef thoroughly.
  2. Add the black pepper, garlic powder, onion powder, and smoked paprika to the meat mixture.
  3. Sprinkle in the mustard seeds, crushed red pepper flakes, and coriander powder.
  4. Add the sugar and salt to the mixture.
  5. Pour in the water and mix until all ingredients are well incorporated.
  6. Cover the mixture and refrigerate for at least 2 hours to allow flavors to meld.
  7. Preheat your oven to 200°F (approximately 95°C).
  8. Use a sausage stuffer to fill casings with the meat mixture, forming long sticks.
  9. Place the filled sticks on a wire rack set over a baking sheet.
  10. Bake in the preheated oven for 2-3 hours, or until the internal temperature reaches 160°F (approximately 71°C).
  11. Remove the pepperoni sticks from the oven and let them cool.
