Instructions
- In a large mixing bowl, combine the ground venison and ground beef thoroughly.
- Add the black pepper, garlic powder, onion powder, and smoked paprika to the meat mixture.
- Sprinkle in the mustard seeds, crushed red pepper flakes, and coriander powder.
- Add the sugar and salt to the mixture.
- Pour in the water and mix until all ingredients are well incorporated.
- Cover the mixture and refrigerate for at least 2 hours to allow flavors to meld.
- Preheat your oven to 200°F (approximately 95°C).
- Use a sausage stuffer to fill casings with the meat mixture, forming long sticks.
- Place the filled sticks on a wire rack set over a baking sheet.
- Bake in the preheated oven for 2-3 hours, or until the internal temperature reaches 160°F (approximately 71°C).
- Remove the pepperoni sticks from the oven and let them cool.
