- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 cup mushrooms, sliced
- 1 sweet potato, peeled and cubed
- 4 cups vegetable broth
- 1 can (14 oz) pumpkin puree
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- Salt and pepper to taste
- 1 cup spinach, chopped
- Pumpkin seeds for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing until soft.
- Stir in carrots, celery, and mushrooms; cook for about 5 minutes.
- Add sweet potato, vegetable broth, pumpkin puree, thyme, sage, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until sweet potatoes are tender.
- Stir in spinach and cook for an additional 5 minutes.
- Serve hot, garnished with pumpkin seeds.
Notes
To thicken the stew, blend a portion of the mixture or stir in cornstarch mixed with water. Experiment with different herbs and spices for a personalized touch.
