Ingredients

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 cup mushrooms, sliced
  • 1 sweet potato, peeled and cubed
  • 4 cups vegetable broth
  • 1 can (14 oz) pumpkin puree
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper to taste
  • 1 cup spinach, chopped
  • Pumpkin seeds for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing until soft.
  2. Stir in carrots, celery, and mushrooms; cook for about 5 minutes.
  3. Add sweet potato, vegetable broth, pumpkin puree, thyme, sage, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until sweet potatoes are tender.
  4. Stir in spinach and cook for an additional 5 minutes.
  5. Serve hot, garnished with pumpkin seeds.

Notes

To thicken the stew, blend a portion of the mixture or stir in cornstarch mixed with water. Experiment with different herbs and spices for a personalized touch.
