- 2 pounds beef chuck, cut into chunks
- 3 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 2 bay leaves
- Salt, to taste
- Pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides. Remove and set aside.
- Sauté the onions and garlic until translucent.
- Add carrots and potatoes, sauté briefly.
- Add the beef back to the pot along with beef broth and tomato paste. Stir well.
- Season with thyme, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and cover. Let simmer for about 120 minutes.
- Remove bay leaves and garnish with fresh parsley before serving.
Notes
Consider adding different vegetables or herbs for variations. If the stew thickens too much, add more broth or water.
