Description

A hearty beef stew that transforms into a flavorful elixir, perfect for family gatherings and cold evenings.


Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides. Remove and set aside.
  3. Sauté the onions and garlic until translucent.
  4. Add carrots and potatoes, sauté briefly.
  5. Add the beef back to the pot along with beef broth and tomato paste. Stir well.
  6. Season with thyme, bay leaves, salt, and pepper.
  7. Bring to a boil, then reduce heat and cover. Let simmer for about 120 minutes.
  8. Remove bay leaves and garnish with fresh parsley before serving.

Notes

Consider adding different vegetables or herbs for variations. If the stew thickens too much, add more broth or water.
