Description

A vibrant and flavorful dish featuring salmon roasted with garlic and za’atar spice blend, surrounded by baby potatoes, broccoli, and grape tomatoes.


Ingredients

  • 12 baby potatoes (about 12 oz), scrubbed
  • 2 cups grape tomatoes (about 10 oz), halved
  • 6 oz broccoli florets
  • 3 tbsp fresh minced garlic (about 5 to 6 cloves)
  • Quality extra virgin olive oil
  • Salt and pepper to taste
  • 2 tsp za’atar spice, divided
  • 1 tsp coriander, divided
  • 1 lb salmon fillet, no skin
  • Juice of 1 lemon

Instructions

  1. In a large bowl, combine the scrubbed baby potatoes, halved grape tomatoes, and broccoli florets. Drizzle 2 tablespoons of extra virgin olive oil over the mixture. Toss to coat the vegetables evenly.
  2. Season with a pinch of salt and pepper, then add 1 tablespoon of minced garlic, 1 teaspoon of za’atar spice, and ½ teaspoon of coriander. Toss again to blend all flavors.
  3. Transfer the seasoned vegetables to a rimmed baking sheet in an even layer.
  4. Pat the salmon dry and season with salt and pepper to taste. Drizzle a small amount of olive oil, then spread the remaining minced garlic on top.
  5. Sprinkle the remaining za’atar and coriander over the salmon fillet. Slice the salmon into four equal pieces and place them on the baking sheet alongside the vegetables.
  6. If desired, drizzle extra olive oil over both the salmon and vegetables.
  7. Bake in the preheated oven for 15-16 minutes, until the salmon is cooked through and the vegetables are tender.
  8. Remove from the oven, squeeze fresh lemon juice over the salmon, and add a sprinkle of za’atar before serving.

Notes

For a deeper flavor, marinate the salmon with garlic and spices for 15-30 minutes before baking. Experiment with different vegetables as desired.
