- 4 medium zucchini (approximately 2 pounds), sliced into ¼-inch rounds
- 1 large sweet onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups shredded mozzarella cheese
- 1 cup freshly grated Parmesan cheese
- 1 cup sharp cheddar cheese, shredded
- ¾ cup panko bread crumbs
- 2 large eggs, lightly beaten
- ¼ cup fresh basil, chopped
- 2 tablespoons fresh thyme leaves
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon red pepper flakes (optional)
Instructions
- Salt zucchini slices and let drain for 15 minutes, then pat dry
- Preheat oven to 375°F and grease a 9×13 inch baking dish
- Sauté onions and garlic in olive oil until soft
- Mix cheeses, eggs, herbs, and seasonings in a bowl
- Layer zucchini, onion mixture, and cheese mixture in baking dish
- Top with remaining cheese and breadcrumbs
- Bake for 35-40 minutes until golden brown
- Let rest 10-15 minutes before serving
