- 1/2 cup low-sodium chicken broth
- 1/2 cup low-moisture mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Cut zucchini in half lengthwise and scoop out centers, leaving 1/4-inch borders.
- Brush zucchini boats with olive oil, season with salt and pepper, and pre-bake for 10 minutes on a parchment-lined baking sheet.
- Heat remaining oil in a skillet over medium heat. Cook onions until translucent, then add ground turkey and cook until no longer pink.
- Add minced garlic, bell pepper, reserved zucchini flesh, and cherry tomatoes. Cook for 3-4 minutes until vegetables soften.
- Stir in herbs, spices, and chicken broth. Simmer 5-7 minutes until liquid reduces.
- Fill par-baked zucchini boats with turkey mixture and sprinkle with cheeses.
- Bake for 10-15 minutes until cheese melts and zucchini is tender.
- Let rest for 2-3 minutes, garnish with parsley, and serve.
