- For the Beef and Zucchini:
- 1 pound lean ground beef (90/10)
- 4 medium zucchini, diced
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup low-sodium broth
Instructions
- Blend green sauce ingredients until slightly textured.
- Brown ground beef with half the seasonings in olive oil.
- Sauté onion and garlic until translucent.
- Add zucchini and remaining seasonings, cook 5-7 minutes.
- Pour in broth and 3/4 of green sauce.
- Simmer 2-3 minutes until flavors meld.
- Serve hot with optional garnishes.
