  • 4 medium zucchini, diced
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup low-sodium broth

Instructions

  1. Blend green sauce ingredients until slightly textured.
  2. Brown ground beef with half the seasonings in olive oil.
  3. Sauté onion and garlic until translucent.
  4. Add zucchini and remaining seasonings, cook 5-7 minutes.
  5. Pour in broth and 3/4 of green sauce.
