Description

Ingredients

  • 1 lb dried bucatini
  • 1.5 lb assorted mushrooms (shiitake, maitake, chanterelle, oyster), chopped or pulled apart
  • 1/4 cup yellow miso paste
  • 2 tbsp minced garlic
  • 1/2 cup butter
  • 2 cups pasta water
  • 1/2 cup grated pecorino romano
  • 1/2 cup grated parmesan
  • 1 cup heavy cream
  • 1 scallion, finely chopped
  • 4 tsp olive oil
  • Salt and cracked black pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add 4 teaspoons of olive oil, allowing it to coat the skillet evenly.
  2. Introduce the mushrooms into the hot oil. Sauté them, stirring occasionally, until they turn golden brown and tender, about 5-6 minutes.
  3. Add the minced garlic to the mushrooms, cooking until fragrant, roughly 1-2 minutes.
  4. Pour in the heavy cream, followed by the yellow miso paste. Stir until the miso fully dissolves into the sauce.
  5. Incorporate the butter gradually, mixing it in to create a silky texture.
  6. Cook the bucatini in boiling salted water according to package instructions, usually around 8-10 minutes for al dente.
  7. Reserve 2 cups of pasta water before draining the bucatini. Add it directly to the sauce to adjust its consistency if needed.
  8. Combine the drained bucatini with the sauce, tossing until the pasta is fully coated.
  9. Stir in the grated pecorino romano and parmesan cheeses, allowing them to melt into the mixture.
  10. Taste and season with salt and cracked black pepper as desired.
  11. Garnish with finely chopped scallions before serving.

Notes

For maximum flavor, allow the miso paste to bloom in the butter before adding the cream.
