Description

These 5 Ingredient Beef Enchiladas are quick to make and full of flavor, perfect for busy weeknights and family gatherings.

Ingredients

Scale
  • 1 lb ground beef
  • 1 can enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded cheese
  • 1 can black beans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Add enchilada sauce to the beef and mix well.
  4. Spoon the beef mixture into each tortilla, adding black beans if using, and roll them up.
  5. Place the filled tortillas in a baking dish, seam side down.
  6. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
  8. Serve hot.

Notes

Warming the tortillas before filling makes them more pliable and prevents tearing. Experiment with different cheese blends for added flavor.
