Instructions
- Wash all vegetables thoroughly.
- Chop cucumber, cherry tomatoes, and parsley, then combine in a mixing bowl.
- Add olive oil, vinegar, and salt to the vegetable mixture.
- Layer the salad base in a bowl with the mixed vegetables at the bottom.
- Add chickpeas, followed by olives and cooked quinoa on top.
- Dollop hummus and tzatziki over the top as a finishing touch.
- Garnish with additional parsley or black pepper if desired.
