Ingredients

- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 1 inch fresh ginger, grated

- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup kale or spinach
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the onion, carrots, and celery; sauté until they are tender, about 5-7 minutes.
- Stir in the garlic, ginger, and turmeric, cooking for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Add the shredded chicken and kale or spinach; cook until the greens are wilted.
- Season with salt, pepper, and lemon juice.
- Serve warm.
Notes
For a spicier kick, add a pinch of chili flakes during sautéing. Adjust seasoning before serving for optimal flavor.
