- 5 medium apples (peeled, cored, and chopped into ¼-inch cubes)
- 1/3 cup brown sugar (packed)
- 2 tablespoons granulated sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon fresh lemon juice
- 1 cup water
- 2 tablespoons cornstarch
- 8 flour tortillas (6-inch)
- 1/3 cup granulated sugar
- 1 ½ teaspoons ground cinnamon
- Non-stick cooking spray
Instructions
- In a medium saucepan, mix the chopped apples, brown sugar, granulated sugar, cinnamon, lemon juice, and water.
- Cook over medium heat, stirring occasionally, until the apples are tender.
- Dissolve the cornstarch in a small bowl with a bit of water. Add this slurry to the apple mixture, stirring constantly until it thickens. Remove from heat and set aside to cool slightly.
- Preheat the oven to 350°F (175°C).
- Cut each tortilla into triangles, then spray with non-stick cooking spray.
- In a shallow bowl, mix the granulated sugar and cinnamon. Sprinkle this mixture on the tortilla triangles.
- Bake the tortilla chips for about 10-12 minutes or until crisp and golden.
- Serve the warm apple pie dip with the cinnamon sugar tortilla chips.
Notes
Use a combination of apple varieties for more complex flavor, and consider adding nuts or raisins for added texture.
