  • 1/3 cup brown sugar (packed)
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon fresh lemon juice
  • 1 cup water
  • 2 tablespoons cornstarch
  • 8 flour tortillas (6-inch)
  • 1/3 cup granulated sugar
  • 1 ½ teaspoons ground cinnamon
  • Non-stick cooking spray

Instructions

  1. In a medium saucepan, mix the chopped apples, brown sugar, granulated sugar, cinnamon, lemon juice, and water.
  2. Cook over medium heat, stirring occasionally, until the apples are tender.
  3. Dissolve the cornstarch in a small bowl with a bit of water. Add this slurry to the apple mixture, stirring constantly until it thickens. Remove from heat and set aside to cool slightly.
  4. Preheat the oven to 350°F (175°C).
  5. Cut each tortilla into triangles, then spray with non-stick cooking spray.
  6. In a shallow bowl, mix the granulated sugar and cinnamon. Sprinkle this mixture on the tortilla triangles.
  7. Bake the tortilla chips for about 10-12 minutes or until crisp and golden.
