- 1/3 cup (80 ml) apple cider
- 1/3 cup (80 ml) honey
- 3 tablespoons (45 ml) apple cider vinegar
- 1/4 teaspoon (1 ml) salt
- 1/8 teaspoon (1 ml) pepper
- 3/4 cup (180 ml) vegetable oil (or extra virgin olive oil)
- 1 large bag greens (spring mix, spinach mix, etc.)
- 1–2 apples, medium sliced or diced
- 1 butternut squash, diced and roasted (see note)
- 1 handful candied pecans or other nut of your choice
- 1 handful pepitas (pumpkin seeds)
- 1 handful crumbled feta cheese
- 1 handful pomegranate arils
- 1 small red onion, sliced thin
- shredded or diced roasted beef (optional)
Instructions
- Combine the apple cider, honey, apple cider vinegar, salt, and pepper in a blender. Blend until the honey is fully mixed in, scraping the blender’s bottom if necessary.
- While the blender is on a low setting, slowly pour in the oil in a thin, consistent stream until it is completely blended.
- Adjust the seasoning with more salt and pepper if needed, and add extra vinegar for a tangier flavor if preferred.
- In a large serving dish, place the greens and layer all the other ingredients on top.
- Mix with the dressing and savor the flavors.
Notes
- Consider using extra virgin olive oil for a lighter dressing option.
- Try balsamic vinegar for a sweet and tangy flavor in the dressing.
- For a vegetarian twist, skip the roasted beef and add more nuts or seeds for protein.
