Ingredients

  • 1/3 cup (80 ml) honey
  • 3 tablespoons (45 ml) apple cider vinegar
  • 1/4 teaspoon (1 ml) salt
  • 1/8 teaspoon (1 ml) pepper
  • 3/4 cup (180 ml) vegetable oil (or extra virgin olive oil)
  • 1 large bag greens (spring mix, spinach mix, etc.)
  • 12 apples, medium sliced or diced
  • 1 butternut squash, diced and roasted (see note)
  • 1 handful candied pecans or other nut of your choice
  • 1 handful pepitas (pumpkin seeds)
  • 1 handful crumbled feta cheese
  • 1 handful pomegranate arils
  • 1 small red onion, sliced thin
  • shredded or diced roasted beef (optional)

Instructions

  1. Combine the apple cider, honey, apple cider vinegar, salt, and pepper in a blender. Blend until the honey is fully mixed in, scraping the blender’s bottom if necessary.
  2. While the blender is on a low setting, slowly pour in the oil in a thin, consistent stream until it is completely blended.
  3. Adjust the seasoning with more salt and pepper if needed, and add extra vinegar for a tangier flavor if preferred.
  4. In a large serving dish, place the greens and layer all the other ingredients on top.
  5. Mix with the dressing and savor the flavors.

Notes

  • Consider using extra virgin olive oil for a lighter dressing option.
  • Try balsamic vinegar for a sweet and tangy flavor in the dressing.
  • For a vegetarian twist, skip the roasted beef and add more nuts or seeds for protein.
