  • 810 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 12 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½1 tsp red chili flakes (optional)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)

Instructions

  1. Cook the bacon in a large skillet until crispy. Chop it into bite-sized pieces and set aside.
  2. In a large pot, add the butter or olive oil over medium heat and sauté the onion and carrots until tender, about 5 minutes.
  3. Pour in the chicken broth and bring to a gentle simmer.
  4. Gradually stir in the heavy cream and add the seasonings: salt, black pepper, garlic powder, dried thyme, and chili flakes if desired.
  5. Add the gnocchi to the pot and cook for about 2 minutes or until softened.
  6. Fold in the crispy bacon and adjust seasoning as needed. Serve hot.

Notes

For a spicier kick, adjust the red chili flakes to your taste. Experiment with different types of cheddar for unique flavor combinations.
