- 4 cups potatoes, peeled and diced
- 1 cup cheddar cheese, shredded

- 1 can cream of chicken soup
- 1 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook until they start to become tender.
- Combine cooked chicken, mixed vegetables, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
- Stir in the partially cooked potatoes and mix well.
- Pour the mixture into a greased baking dish and top with shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes and garnish with fresh parsley before serving.
Notes
For a crustier top, broil the casserole for a minute or two after baking. Adjust seasoning and consider adding sour cream or cream cheese for a creamier dish.
