- 1 block Feta cheese
- 4–6 Eggs
- 1 cup Cherry tomatoes, halved
- 2 cups Fresh spinach, packed
- 2–3 tablespoons Olive oil
- Salt, to taste
- Pepper, to taste
- Fresh herbs (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Add cherry tomatoes and spinach to a baking dish, drizzle with olive oil, and season with salt and pepper.
- Place a block of feta cheese in the center of the dish.
- Crack the eggs around the feta and season with additional salt and pepper.
- Bake for about 20-25 minutes or until the eggs are set and the cheese is golden.
- Garnish with fresh herbs if desired and serve warm.
