  • 1 tablespoon (15 ml) balsamic vinegar
  • 2 cloves garlic, pressed
  • 4 large portobello mushroom caps
  • 10 ounces (283 g) frozen chopped spinach, defrosted and excess water removed
  • 1/2 cup (50 g) grated halal-friendly cheese, divided
  • 23 tablespoons (3045 ml) heavy cream
  • 1 cup (125 g) shredded mozzarella cheese
  • Coarse kosher salt and freshly ground black pepper

Instructions

  1. In a small mixing bowl, combine the olive oil, balsamic vinegar, and garlic by whisking them together thoroughly.
  2. Put the mushroom caps into a large resealable plastic bag, then pour the olive oil mixture inside. Close the bag and turn it multiple times to ensure the mushrooms are well-coated with the marinade. Let them sit for 15 minutes.
  3. Set your oven to a temperature of 450°F. Arrange the marinated mushrooms with the stem side facing down on a baking sheet with edges. Bake them for 10 minutes.
  4. While the mushrooms are baking, prepare the filling by mixing the spinach, ¼ cup of halal-friendly cheese, and heavy cream in a medium-sized bowl. Add salt and pepper according to your taste.
  5. Once the mushrooms are out of the oven, turn them over. Evenly distribute the spinach mixture onto each mushroom, then sprinkle the top with mozzarella cheese and the rest of the halal-friendly cheese.
  6. Place the mushrooms back into the oven for another 10 minutes, or until the cheese is melted and starts to turn golden brown.
  7. Enjoy them warm, accompanied by mashed potatoes, grilled vegetables, or your other preferred sides.
