- 1 lb ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning (store-bought or homemade)
- ½ cup salsa
- 1 cup refried beans
- 1 ½ cups shredded cheddar cheese (or Mexican blend)
- 6 large flour tortillas (burrito size)
- 2 tbsp vegetable oil (for brushing or frying)
Instructions
- Cook the beef filling: In a large skillet over medium heat, add the ground beef and diced onion. Brown the meat until fully cooked and the onion turns tender.
- Drain excess grease: Carefully drain any fat left in the skillet to keep your chimichangas crispy rather than soggy.
- Stir in the flavor: Add minced garlic, the taco seasoning, and salsa. Simmer for 3–4 minutes, mixing well to combine all flavors into the beef.
- Assemble the chimichangas: Take each flour tortilla, and spread a spoonful of refried beans along the center. Add a generous scoop of the beef mixture and a handful of shredded cheese.
- Roll them up: Fold in the sides of the tortilla and roll it up tightly, just like a burrito. Secure the filling well!
- Cook the chimichangas: For the oven method: Preheat your oven to 400°F (200°C). Place the chimichangas seam-side down on a baking sheet. Brush lightly with vegetable oil and bake for 18-20 minutes, flipping them once until they are golden and crispy. For the skillet method: Heat 2-3 tablespoons of oil in your skillet. Place the chimichangas seam-side down and fry for 2-3 minutes on each side until golden brown and crispy.
- Serve: Once cooked, remove the chimichangas from the heat. Let them rest for 2 minutes before serving. Add toppings like sour cream, guacamole, lettuce, or additional salsa if desired.
Notes
Don’t overfill the tortillas and adjust the seasonings to your taste. Experiment with different cheese types for varied flavors.
