- 1 medium Diced Onion
- 2–3 cloves Garlic, minced
- 1 pound Sliced Mushrooms (choose your favorite)
- 2 tablespoons Flour
- 4 cups Broth (vegetable or chicken)
- 1 cup Milk (whole milk is best for creaminess)
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, heat the butter and olive oil over medium heat.
- Add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onions become translucent.
- Stir in the sliced mushrooms and cook until they release their moisture, roughly 5-7 minutes.
- Sprinkle the flour over the mushroom mixture and stir to combine, cooking for another 2 minutes to remove the floury taste.
- Gradually pour in the broth while stirring, ensuring there are no lumps. Bring the mixture to a simmer.
- Stir in the milk and heat through. Season with salt and pepper to taste.
Notes
Experiment with different mushrooms for varied flavors. For a thicker soup, gradually add more flour. Garnish with parsley or a swirl of cream when serving.
