Description

Delicious and fresh fish tacos bursting with flavor, perfect for summer days.


Ingredients

  • 1 lb fish (cod, tilapia, or salmon)
  • 2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • Salt and pepper to taste
  • 1 Tbsp olive oil (for cooking fish)
  • 2 cups shredded cabbage mix (coleslaw)
  • 1/4 cup cilantro, chopped
  • 1 whole jalapeño pepper, sliced
  • 2 tsp honey
  • 2 tsp olive oil (for dressing)
  • Juiced from 1 whole lime
  • About 8 corn tortillas
  • Avocados and tomatoes for topping

Instructions

  1. Preheat a skillet over medium heat. In a small bowl, mix together the garlic powder, onion powder, paprika, chili powder, cumin, salt, and pepper.
  2. Rub the spice mixture evenly over the fish fillets.
  3. Add 1 tablespoon of olive oil to the skillet. Once hot, place the fish in the pan and cook for about 3-5 minutes on each side, or until the fish flakes easily with a fork.
  4. While the fish cooks, prepare the dressing by whisking together the honey, 2 teaspoons of olive oil, lime juice, and a pinch of salt.
  5. Heat the corn tortillas in a dry skillet over low heat until warm and pliable.
  6. Once the fish is ready, place it in a tortilla and top with cabbage, cilantro, sliced jalapeño, and a drizzle of the honey-lime dressing.
  7. Finish with slices of avocado and tomato to complete your tacos.
  8. Serve immediately and enjoy!

Notes

For added crunch, toss the cabbage with your dressing before assembling the tacos. Marinate your fish for extra flavor.
