Description

Grilled onions caramelize to release their natural sweetness and develop a smoky flavor, making them a versatile side dish that elevates any meal.


Ingredients

  • 2 sweet onions (such as Walla Walla or Vidalia)
  • 1 tablespoon olive oil
  • Kosher salt
  • Freshly ground pepper

Instructions

  1. Hold each onion firmly on the cutting board, root end facing sideways.
  2. Drive a wooden skewer through the center of the onion, pushing it fully through until the flat end is adjacent to the onion.
  3. Slice off the root end of the onion on one side of the skewer.
  4. On the opposite side, keeping about 3/4 inch of onion intact, slice it while ensuring the skewer remains in the center.
  5. Use a knife to cut any excess skewer sticking out.
  6. Repeat this process for the second onion, ending up with onion rings about 3/4 inch thick.
  7. Brush both sides of the onion slices with olive oil and season generously with kosher salt and fresh ground pepper.
  8. Place the onion slices onto the grill grates over medium heat.
  9. Cook each side for about 4 to 5 minutes, flipping only once.

Notes

For an added flavor twist, marinate the onion slices in olive oil and seasonings before grilling. Use a grill basket for easier handling.
