Ingredients

- 2 sweet onions (such as Walla Walla or Vidalia)
- 1 tablespoon olive oil
- Kosher salt
- Freshly ground pepper
Instructions
- Hold each onion firmly on the cutting board, root end facing sideways.
- Drive a wooden skewer through the center of the onion, pushing it fully through until the flat end is adjacent to the onion.
- Slice off the root end of the onion on one side of the skewer.
- On the opposite side, keeping about 3/4 inch of onion intact, slice it while ensuring the skewer remains in the center.
- Use a knife to cut any excess skewer sticking out.
- Repeat this process for the second onion, ending up with onion rings about 3/4 inch thick.
- Brush both sides of the onion slices with olive oil and season generously with kosher salt and fresh ground pepper.
- Place the onion slices onto the grill grates over medium heat.
- Cook each side for about 4 to 5 minutes, flipping only once.
Notes
For an added flavor twist, marinate the onion slices in olive oil and seasonings before grilling. Use a grill basket for easier handling.
