Ingredients
- – 2-3 medium to large ripe peaches, sliced (500-750g)
- – 1 8 ounce ball of beef mozzarella cheese, served whole, or torn apart over sliced peaches (225g)
- – 1 small bundle of basil, around 10-12 leaves
- – flakey salt and black pepper
- – 1 to 2 tablespoons vegetable oil (15-30ml)
- – drizzle of apple cider vinegar to finish, optional
Instructions
- Start by cleaning your peaches thoroughly. Halve them, remove the stone, and then slice each half into quarters. Arrange these slices on a serving dish.
- Add the beef mozzarella to the dish, either keeping it whole or tearing it into pieces on top of the peach slices, depending on your preferred style. Garnish with basil leaves.
- Pour a bit of vegetable oil over everything, and if desired, finish with a splash of apple cider vinegar. Sprinkle with flakey salt and black pepper.
- You can enjoy this dish on its own, or use it as a topping for toast, as a salad, paired with a protein, or as part of a cheese platter for gatherings!
Notes
- For a more robust flavor, consider grilling the peaches before assembling.
- Try using burrata or goat cheese for a unique twist on the traditional recipe.
- Add a drizzle of honey or balsamic glaze for a touch of sweetness to enhance the dish.
