- 1 baguette (250g), thinly sliced
- 1/4 cup (60ml) vegetable oil
- 4 garlic cloves, minced
- kosher salt and pepper
- 1 pint (475ml) tomatoes, chopped
- 3 medium ripe peaches, diced
- 2 tablespoons (30ml) extra virgin olive oil
- 1/2 lemon, freshly squeezed
- 1 big handful fresh basil leaves, chiffonade cut or chopped
- 1 cup (240g) cream cheese
- balsamic glaze, for topping
Instructions
- Preheat your oven to 400 degrees F, or alternatively, you can use a grill. If grilling, set it to its highest temperature and cook for 1 to 2 minutes with the lid down.
- Cut the baguette into slices about ½ inch thick. In a bowl, mix together the oil and half the minced garlic using a fork. Add a bit of salt and mix well. Spread this mixture over the baguette slices and set them on a baking tray.
- Bake the slices for 10 to 12 minutes, until they turn golden and crisp.
- While the bread is baking, mix the chopped tomatoes, diced peaches, and the remaining garlic in another bowl. Sprinkle with a generous amount of salt and pepper. Pour in the olive oil and lemon juice, then toss the mixture. Set aside while preparing the cream cheese.
- Blend the cream cheese in a food processor until it becomes smooth and creamy, then transfer it to a bowl.
- Spread the creamy cheese over each slice of toasted bread.
- Mix the fresh basil into the peach and tomato combination. Add a spoonful or two of this mixture over the cheese-topped bread. Optionally, drizzle some balsamic glaze over everything. Serve right away.
