- 1 rotisserie chicken, shredded
- 2 cups cooked rice
- 1 cup frozen mixed vegetables
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded cheddar cheese (divided)
- 1/2 cup milk
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded rotisserie chicken, cooked rice, frozen mixed vegetables, cream of chicken soup, milk, garlic powder, and half of the cheddar cheese in a large mixing bowl.
- Season with salt and pepper to taste, and mix until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Top with the remaining cheddar cheese and breadcrumbs if using.
- Bake in the preheated oven for 25-30 minutes, or until heated through and bubbly.
- Let it cool slightly before serving.
Notes
Consider adding a pinch of cayenne for extra spice. Can substitute fresh vegetables but may need additional cooking time.
