A comforting casserole featuring shredded rotisserie chicken, creamy soup, and melted cheese, perfect for busy families.


Ingredients

  • 1 rotisserie chicken, shredded
  • 2 cups cooked rice
  • 1 cup frozen mixed vegetables
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese (divided)
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded rotisserie chicken, cooked rice, frozen mixed vegetables, cream of chicken soup, milk, garlic powder, and half of the cheddar cheese in a large mixing bowl.
  3. Season with salt and pepper to taste, and mix until well combined.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. Top with the remaining cheddar cheese and breadcrumbs if using.
  6. Bake in the preheated oven for 25-30 minutes, or until heated through and bubbly.
  7. Let it cool slightly before serving.
