Description

A luscious layered chocolate cake topped with whipped cream and cherries, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 oz) Morello cherries, drained
  • 1 1/2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • Chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients and beat on medium speed for 2 minutes.
  4. Stir in boiling water until the batter is smooth.
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Once cooled, slice each cake in half horizontally to create four layers.
  9. Place one layer on a serving plate, spread with a layer of whipped cream, and top with cherries.
  10. Repeat with the next two layers, finishing with a layer of cake on top.
  11. Frost the entire cake with whipped cream and decorate with chocolate shavings.
  12. Chill before serving.

Use fresh, high-quality cherries for the best flavor. Chill the cake before serving for better texture.
