A delightful twist on a classic dessert, this Boston Cream Pie Poke Cake combines a moist yellow cake with creamy vanilla pudding and rich chocolate ganache.

- 1 Yellow Cake Mix
- Ingredients as called for on the box (generally includes eggs, oil, and milk instead of water)
- 2 (3 oz.) packages of vanilla pudding
- 4 cups milk
- 1/4 cup heavy cream
- 3 tbsp. butter
- 4 ounces semi-sweet chocolate
- 1 cup powdered sugar
- 1 tsp. vanilla
Instructions
- Prepare the yellow cake mix according to the package directions, substituting water with milk and adding one extra egg.
- While the cake bakes (20-25 minutes), whisk together 4 cups of milk and both packages of pudding in a mixing bowl until thickened.
- When the cake is about 5 minutes from being done, poke holes throughout the warm cake with the back of a wooden spoon.
- Pour the pudding mixture over the cake and cover with plastic wrap.
- Refrigerate for about 2 hours to allow the pudding to set.
- For the ganache, microwave butter and cream for about 2 minutes, add chocolate and stir until smooth.
- Whisk in powdered sugar and vanilla until free of lumps.
- Pour the ganache over the cake and refrigerate again for 2-3 hours before serving.
Notes
Garnish with chocolate shavings or a dusting of powdered sugar for an appealing presentation.
