Ingredients

  • – 6 cups (1.4 L) fresh broccoli florets about 2 bunches
  • – 10.5 oz (300 g) can cream of mushroom soup (or homemade)
  • – 1 cup (240 ml) mayonnaise
  • – 2 large eggs
  • – 2 Tablespoons (30 ml) dried minced onion
  • – 1 cup (120 g) freshly grated sharp cheddar cheese
  • – 1 cup (100 g) cheese crackers, crushed

Instructions

  1. Fill a large pot with water and heat until it boils. Add the broccoli florets and cook them for 2 minutes. Drain thoroughly.
  2. In a large bowl, blend together the cream of mushroom soup, mayonnaise, eggs, dried minced onion, and grated cheddar cheese until well combined.
  3. Add the broccoli to the mixture and stir until everything is evenly coated. Transfer the mixture into a greased casserole dish measuring about 2 quarts or 8 inches.
  4. Scatter the crushed cheese crackers over the top. Place in the oven and bake at 400 degrees F for 40 to 45 minutes.

Notes

  • Try using low-fat mayonnaise or a mix of Greek yogurt and mayonnaise for a healthier option.
  • Experiment with Gouda or Swiss cheese for a unique flavor.
  • Add paprika or cayenne pepper for a hint of spice, or try adding cooked diced chicken or crispy bacon for extra protein and flavor.
