- 1/2 cup (120 ml) heavy cream
- 1 cup (200 g) packed brown sugar
- 1 tsp (5 ml) vanilla extract
- 2 1/2 cups (300 g) powdered sugar, sifted
Instructions
- Set your oven to a temperature of 350°F (175°C).
- Combine the yellow cake mix, large eggs, vegetable oil, peach nectar or juice, and a drop of orange food coloring if desired, and blend until everything is smooth. Gently incorporate the peeled and chopped peaches into the mix, then pour the mixture into a 9×12-inch pan that has been lightly coated with a non-stick spray. Place in the oven and cook for approximately 28 minutes or until a toothpick inserted comes out clean, with only a few moist crumbs attached.
- In a saucepan, melt the unsalted butter, then add heavy cream and packed brown sugar. Stir continuously until the mixture reaches a boil. Remove the pan from the heat and stir in the vanilla extract and sifted powdered sugar. Whisk thoroughly until the mixture is smooth and any lumps have dissolved. If necessary, return to low heat to achieve the desired consistency.
- Carefully drizzle the frosting over the cake, ensuring an even coating on the first attempt as it will quickly solidify, making it difficult to spread further without causing cracks.
- Allow the frosting to firm up at room temperature or chill in the refrigerator before slicing the cake.
