- 1 Boxed brownie packet
- 60 ml brewed espresso coffee
- 50 g unsalted butter (melted)
- 100 g dark chocolate 70% (chopped)
- 200 g granulated sugar
- 90 g unsalted butter (room temperature and cubed)
- 120 ml double cream (heavy cream) (room temperature)
- 1 tsp vanilla extract
- 2 tsp flaked sea salt
- 397 g unsweetened condensed milk (1 can)
- 480 ml double cream (heavy cream)
- 1 tsp vanilla extract
Instructions
- Preheat your oven according to brownie packet instructions and line your baking dish with parchment paper.
- In a mixing bowl, combine the brownie mix, brewed espresso, melted unsalted butter, and granulated sugar. Stir until uniform.
- Fold in the chopped dark chocolate. Add cubed butter, room temperature double cream, vanilla, and sea salt. Mix thoroughly.
- Pour batter into the baking dish and bake as directed on the box or until a toothpick comes out with a few moist crumbs.
- While brownies bake, prepare the salted caramel sauce by simmering unsweetened condensed milk and heavy cream in a saucepan over low heat, whisking until thickened (about 15 minutes).
- Stir in vanilla extract and flaked sea salt.
- Once brownies are cool, cut them into bite-sized pieces.
- Whisk remaining heavy cream until soft peaks form and gently fold into cooled brownie pieces and salted caramel sauce.
- Transfer to ice cream maker and churn according to manufacturer’s instructions.
- Transfer to an airtight container and freeze for several hours until firm.
