Description

Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 apples, peeled, cored, and sliced
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the butternut squash, apple slices, brown sugar, melted butter, cinnamon, nutmeg, and salt in a large bowl. Toss until everything is fully coated.
  3. Transfer the mixture to a greased baking dish.
  4. Sprinkle the chopped nuts and raisins on top if using.
  5. Cover with foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes, or until the squash is tender and slightly caramelized.
  7. Serve warm as a side dish.

Notes

For a sweeter version, increase the brown sugar slightly. Add apple juice to retain moisture if the bake appears dry.
