- 1 butternut squash
- 1 pound Italian sausage
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 1 cup goat cheese
- 1 cup mozzarella cheese
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon Italian seasoning
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the butternut squash into thin slices.
- Cook the Italian sausage in a skillet until browned, then add fresh spinach and cook until wilted.
- Layer slices of butternut squash, sausage and spinach mixture, ricotta, goat cheese, and mozzarella in a baking dish.
- Repeat layers until all ingredients are used, ending with mozzarella on top.
- Season with salt, pepper, and Italian seasoning.
- Drizzle with olive oil and cover with foil.
- Bake for 30-40 minutes, removing the foil during the last 10 minutes to brown the top.
- Allow to cool slightly before serving.
Notes
For added flavor, consider using fresh herbs with Italian seasoning. Store leftovers in an airtight container for up to three days, and this dish also freezes well.
