Ingredients

  • 12 oz (340 g) spiral pasta (e.g., cavatappi or rotini)
  • 14 oz (400 g) smoked sausage, sliced (e.g., Andouille or kielbasa)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tsp Cajun seasoning (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and sauté until browned.
  3. Add the minced garlic to the skillet and cook until fragrant, about 1 minute.
  4. Pour in the heavy cream, followed by the Parmesan cheese, Cajun seasoning, salt, and pepper. Stir continuously until the sauce thickens.
  5. Toss the cooked pasta in the skillet, coating it well with the sauce.
  6. Garnish with chopped parsley before serving.

Notes

Adjust Cajun seasoning to your preferred spice level. Save a little pasta water to adjust sauce consistency if needed.
