  • 1 teaspoon (5 ml) ground cinnamon (5 grams)
  • 1/2 teaspoon (3 ml) salt (3 grams)
  • 1/4 teaspoon (1 ml) black pepper (1 gram)
  • 1/2 cup (120 ml) dried cranberries (75 grams)
  • 1/4 cup (60 ml) crumbled goat cheese (40 grams)
  • 1 tablespoon (15 ml) fresh thyme leaves (4 grams)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the cubed butternut squash in a large mixing bowl.
  3. Drizzle the olive oil over the squash and toss to coat evenly.
  4. Add the pure maple syrup to the bowl and mix well.
  5. Sprinkle the ground cinnamon, salt, and black pepper over the squash.
  6. Toss the squash again to ensure even coating with the spices.
  7. Spread the squash cubes in a single layer on a baking sheet.
  8. Roast in the preheated oven for 25-30 minutes, until tender and caramelized.
  9. Meanwhile, place the dried cranberries in a blender or food processor.
  10. Pulse the cranberries until they form a coarse dust.
  11. Once the squash is cooked, remove it from the oven.
  12. Transfer the roasted squash to a serving platter.
  13. Sprinkle the cranberry dust evenly over the squash.
  14. Top with crumbled feta cheese.
  15. Garnish with fresh thyme leaves.
  16. Serve warm and enjoy.
