- 1 cup fresh cranberries (100 g)
- 1/2 cup crumbled cheese (75 g)
- 1 tablespoon fresh thyme leaves (3 g)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes into 1-inch cubes.
- In a large bowl, combine olive oil, maple syrup, ground cinnamon, salt, and black pepper.
- Add the sweet potato cubes to the bowl and toss to coat evenly.
- Spread the sweet potato cubes in a single layer on a baking sheet.
- Bake in the preheated oven for 25-30 minutes, stirring halfway through.
- Rinse the cranberries and pat them dry with a paper towel.
- After 25-30 minutes, remove the baking sheet from the oven.
- Scatter the cranberries over the sweet potato cubes.
- Return the baking sheet to the oven and bake for an additional 10 minutes.
- Remove from the oven and transfer the sweet potato and cranberry mixture to a serving dish.
- Sprinkle the crumbled feta cheese over the sweet potatoes and cranberries.
- Garnish with fresh thyme leaves.
- Serve warm and enjoy.
