Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 medium potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 4 slices bacon, cooked and crumbled
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef with the diced onion and minced garlic until the meat is no longer pink. Drain excess fat.
  2. Add the beef broth and diced potatoes to the pot. Bring to a boil and then reduce to a simmer. Cook until the potatoes are tender, about 15 minutes.
  3. Stir in the milk, shredded cheddar cheese, Worcestershire sauce, and crumbled bacon. Heat until the cheese is melted.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with green onions and additional cheese if desired.

Notes

For a thicker soup, mash a portion of the diced potatoes. Experiment with different cheeses for unique flavors.
