- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 medium potatoes, diced
- 1 cup shredded cheddar cheese
- 1 cup milk
- 4 slices bacon, cooked and crumbled
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef with the diced onion and minced garlic until the meat is no longer pink. Drain excess fat.
- Add the beef broth and diced potatoes to the pot. Bring to a boil and then reduce to a simmer. Cook until the potatoes are tender, about 15 minutes.
- Stir in the milk, shredded cheddar cheese, Worcestershire sauce, and crumbled bacon. Heat until the cheese is melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions and additional cheese if desired.
Notes
For a thicker soup, mash a portion of the diced potatoes. Experiment with different cheeses for unique flavors.
