Ingredients

- 2 medium zucchini, grated
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the grated zucchini, shredded cheese, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Scoop the mixture and form small tots. Place them on the prepared baking sheet.
- Lightly spray the tops with olive oil.
- Bake in the preheated oven for about 20-25 minutes or until golden brown and crispy.
- Allow to cool slightly before serving. Enjoy!
Notes
