Description

Delicious and crispy Cheesy Baked Zucchini Tots made with fresh zucchini, cheese, and seasonings. A perfect appetizer or side dish for any gathering.


Ingredients

  • 2 medium zucchini, grated
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the grated zucchini, shredded cheese, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Scoop the mixture and form small tots. Place them on the prepared baking sheet.
  4. Lightly spray the tops with olive oil.
  5. Bake in the preheated oven for about 20-25 minutes or until golden brown and crispy.
