- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 6 tortillas, cut into strips
- 1/2 cup sour cream (optional)
- Chopped green onions (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix together the shredded chicken, black beans, corn, taco seasoning, and salsa in a large bowl.
- Layer half of the tortilla strips on the bottom of a greased 9×13 inch baking dish.
- Spread half of the chicken mixture over the tortillas, followed by half of the cheese.
- Repeat the layers with the remaining ingredients, ending with the cheese on top.
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
- Let cool slightly before serving. Top with sour cream and chopped green onions if desired.
Notes
Let the casserole rest for a few minutes after baking to help it set.
