A comforting and savory casserole filled with shredded chicken, black beans, and gooey cheese, perfect for family gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 6 tortillas, cut into strips
  • 1/2 cup sour cream (optional)
  • Chopped green onions (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the shredded chicken, black beans, corn, taco seasoning, and salsa in a large bowl.
  3. Layer half of the tortilla strips on the bottom of a greased 9×13 inch baking dish.
  4. Spread half of the chicken mixture over the tortillas, followed by half of the cheese.
  5. Repeat the layers with the remaining ingredients, ending with the cheese on top.
  6. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
  7. Let cool slightly before serving. Top with sour cream and chopped green onions if desired.

Notes

Let the casserole rest for a few minutes after baking to help it set.
