Ingredients
- – 1 tablespoon vegetable oil (15 ml)
- – 1 medium onion, diced
- – 4 ounces beef cream cheese, cut into chunks (115 g)
- – 4 cups cooked and shredded chicken, I use a rotisserie chicken (600 g)
- – 2 (10.75-ounce) cans condensed cream of chicken soup (305 g each)
- – 2 (10-ounce) cans diced tomatoes with green chilies (285 g each)
- – 1 cup canned black beans, drained and rinsed (240 g)
- – 1 tablespoon (15 ml) chili powder
- – 1 teaspoon (5 ml) ground cumin
- – 1 regular size bag tortilla chips
- – 2 cups shredded Mexican cheese (200 g)
Instructions
- Set your oven to 350 degrees Fahrenheit. In a large pan, heat the vegetable oil over medium heat and sauté the diced onion until it becomes tender.
- Incorporate the chunks of beef cream cheese, shredded chicken, condensed cream of chicken soup, diced tomatoes with green chilies, black beans, chili powder, and cumin into the pan.
- Mix thoroughly until the cream cheese has dissolved and the ingredients are well combined.
- Layer one-third of the tortilla chips in a greased 9×13-inch baking pan. Evenly distribute half of the chicken mixture over the chips.
- Sprinkle half of the shredded Mexican cheese on top, then add the remaining chicken mixture.
- Cover with the rest of the tortilla chips and sprinkle with the remaining cheese. Bake for 30 minutes, then serve hot.
