- Jalapeños, diced, 2 medium
- Tortillas, large, 4 pieces
- Cilantro, fresh, chopped, 1/4 cup (60 ml) (15 grams)
- Lime, 1 medium, juiced
- Vegetable oil, 2 tablespoons (30 ml) (28 grams)
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt, black pepper, garlic powder, onion powder, cumin, and paprika.
- Heat olive oil in a skillet over medium heat.
- Cook chicken breasts in the skillet for about 6-7 minutes per side, until fully cooked.
- Remove chicken from the skillet and let it rest for 5 minutes.
- Dice the cooked chicken into small pieces.
- In a mixing bowl, combine cream cheese, cheddar cheese, Monterey Jack cheese, and diced jalapeños.
- Add diced chicken to the cheese mixture and mix until well combined.
- Lay a tortilla flat on a clean surface.
- Spoon 1/4 of the chicken and cheese mixture onto the center of the tortilla.
- Fold in the sides of the tortilla, then roll it up tightly to form a burrito.
- Repeat with remaining tortillas and filling.
- Melt butter in a clean skillet over medium heat.
- Place burritos seam-side down in the skillet.
