Ingredients

  • 2 cups cauliflower florets
  • 2 cups sliced bell peppers
  • 1 cup cherry tomatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the broccoli, cauliflower, bell peppers, and cherry tomatoes with olive oil, garlic, salt, pepper, and Italian seasoning.
  3. Spread the vegetables out on a baking sheet in a single layer.
  4. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned.
  5. Remove from the oven and sprinkle with shredded cheese.
  6. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
