Ingredients

- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups sliced bell peppers
- 1 cup cherry tomatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the broccoli, cauliflower, bell peppers, and cherry tomatoes with olive oil, garlic, salt, pepper, and Italian seasoning.
- Spread the vegetables out on a baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned.
- Remove from the oven and sprinkle with shredded cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve warm and enjoy!
Notes
For crispy edges, avoid overcrowding the baking sheet. Experiment with your favorite spices for added flavor.
