Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the eggs, cottage cheese, and shredded cheese in a mixing bowl.
- Add the diced vegetables, salt, and pepper, and mix until combined.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture into each muffin cup, filling them about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden.
- Let cool for a few minutes, then carefully remove the bites from the muffin tin.
- Serve warm or let cool and store in the refrigerator for meal prep.
